My Tuna Pesto Penne Pasta


Ingredients:

for the penne                                    
250g penne  
a pinch of salt
1 tsp olive oil
1 liter of water (for boiling)                        

 for pasta recipe
2 tbsp olive oil
2 cloves of garlic, crushed and minced
2 medium-sized onion
250g pesto sauce (Clara Ole Chessy Pesto)
250g tuna flakes in brine (drained)
salt and pepper to taste
1 cup parmesan cheese (if desired )

 Cooking Instructions:
1. Cook the penne pasta on boiling water, according to package instruction (add oil to avoid the pasta sticking to each other)
2. On a pan over medium to low heat, Saute garlic and onion in olive oil. Add tuna flakes. Cook for about one to two minutes. 
3. Pour over the Clara Ole Cheesy pesto, making sure everything is in the pan. Add the cooked penne. Add salt and pepper to taste. Mix until well blended with the pasta.
4. Place on a serving platter topped with parmesan and fresh basil leaf. 
5. Serve and enjoy! :)

A Smile and a Thank You

Everyday, as i go to class, i noticed a mom and her son at Loyola street. Sometimes, they would just wake up and fix their things or play around. Often, they sort the garbage and maybe eventually sell these at the junk shop. How i love their smile that no matter how life had been to them they could still manage to smile.

One day, i was shocked when i saw this mother crying hard. She was shouting and crying that someone stole something from her. I couldn't manage to help them since i was already late and i was afraid someone might attack me instead. I was scared.

It led me to some thinking and i got burdened by it. 

After that incident, i never saw them again. I was always bringing some biscuits but i never managed to give it since i couldnt find them anywhere. 

It was a delight on a tuesday morning that i saw them on the steets again. I was so happy i brought some biscuits and handed them over to the mother and her son. I couldn't picture the smile on their faces. Yes, it was only little but they appreciated it a lot.

I told myself that after the boards, i will give them a meal.. As a thank you for showing me hope. Because i always cry over my troubles as being so big that often i get depressed about it, but as i saw them... They carry a bigger burden but they can still find joy in simple things which i already forgot how. Then because of them, hope and joy became alive within my veins again. Thank you God for these wonderful people. How i want to help more like them when i finish the challenge of the board exam.

When being a Christian is not Enough

On the road of being a Christian, we are very privileged to have all the necessary spiritual food we need - from Bibles to devotionals. How amazing it is that we can enjoy these blessings! Grab and make use of the opportunity at hand and through this, we may gain a closer relationship with God. We may not gain some profit financially but its return of investment is greater than whatever cost we may have invested on it - eternal life.

But, do you remember what Jesus said about our faith? (James 2:26) Faith without works is dead. So many teachings that we may learn, but we have to apply it and share the light that we have ( Matthew 5:13-16) - that others may see and experience Christ's love. Many may have avoided doing so, but it is a challenge for each one of us. Go and acts! Share Jesus! Share love! Share God!

Some things to leave behind

There are alot of things to think about rather than personal reasons. There are things more important rather than simply thinking how you felt - hurting. Uncovering the past which should not be done should never have to be an issue - but it is for me. How hard could it be, when it haunts you everyday? Well, past is past and they said you have to leave it behind to move to a new chapter in your life. Oh Lord help me with all the pains i had - remove them and place smiles instead.
